Ecco un contorno gustosissimo e leggero... I finocchi al gratin.<br />
Questa è una versione light, ma voi potete aggiungere mozzarella o altro formaggio filante.<br />
<br />
<b>Ingredienti per 1 persona:</b><br />
1 finocchio<br />
1/2 cucchiaio di olio<br />
1 cucchiaino di parmigiano grattugiato<br />
Pan grattato q.b.<br />
<br />
Pulire e lavare il finocchio, tagliarlo in 8 spcchi e cuocerlo in pentola a pressione per 6 minuti (20 minuti in pentola normale).<br />
Scolare e metterlo in una pirofila. Aggiungere l'olio, il formaggio grattugiato e il pan grattato.<br />
Infornare con grill per 8 minuti circa o fino a quando si sarà formata una crosticina (io ho usato il grill del microonde).<br />
Lasciar intiepidire e servire.<br />

Prima di pulire e tagliare i carciofi vi consiglio di munirvi di guanti usa e getta.<br />

Mettere i pezzettini di carciofi a bagno per 10/15 minuti ( meglio se con delle fette di limone) cambiando l'acqua un paio di volte.</div>

Mettere in un pentolino l'olio, i carciofi e un po'di sale, fare insaporire per qualche minuto e ricoprirli di acqua. Abbassare la fiamma e far cuocere per 30 minuti.</div>

Oggi avevo in frigo della ricotta da consumare e siccome amo i dolci con la ricotta ho fatto questa torta al cioccolato.<br />
<br />
<b>Ingredienti per uno stampo da 22 cm:</b><br />
120 gr di farina<br />
3 uova a temperatura ambiente<br />
180 gr di zucchero<br />
250 gr di ricotta a temperatura ambiente<br />
100 gr di burro<br />
120 - 140 gr di cioccolato fondente<br />
Essenza di vaniglia<br />
<br />
<ol>
<li>1 cucchiaio di cacao amaro</li>
</ol>

1/2 bustina di lievito per dolci<br />
<br />
Iniziano a sciogliere il cioccolato fondente insieme al burro e facciamolo raffreddare prima di iniziare a preparare la torta. Nel frattempo tirate fuori la ricotta e le uova dal frigo perché è importante che siano a temperatura ambiente (basteranno 15 minuti).<br />
In una ciotola unire le uova con lo zucchero e sbattere con le fruste elettriche fino a che il composto non diventerà gonfio e spumoso. Poi, con le fruste alla minima velocità, unire poco alla volta la ricotta e continuare così anche per il resto degli ingredienti. Dopo unire a cucchiaiate la farina e il cucchiaio di cacao. Non aggiungere altra farina fino a che l'impasto non incorpora quella precedente. Poi unire il cioccolato col burro fuso, l'essenza di vaniglia ed infine il lievito.<br />
<br />
Foderare una teglia con della carta forno e infornare in forno preriscaldato a 170° per 45 minuti circa. Regolarsi sempre con la prova stecchino.<br />
<br />
Rimarrete sorpresi per la sofficita di questa torta grazie alla ricotta nell'impasto!<br />

Questa torta di mele piace tantissimo in casa. In versione senza uova e burro poi e anche più leggera.<br />
Sostituendo il latte con quello vegetale diventa una torta vegana a tutti gli effetti.<br />
<br />
<b>Ingredienti:</b><br />
200 gr di farina<br />
80 gr di zucchero<br />
150 gr di olio di semi<br />
200 gr di latte<br />
Mezza bustina di lievito<br />
Succo di limone<br />
2 mele<br />
Cannella<br />
<br />
Tagliare le mele a fettine sottili e metterle da parte in una ciotola con il succo di limone. Nel frattempo, in un'altra ciotola mettere lo zucchero, l'olio e il latte e mescolare con una frusta a mano.<br />
Unire la farina insieme al lievito e continuare a mescolare. Per ultimo aggiungere la cannella.<br />
Foderare uno stampo con della carta forno lavata sotto l'acqua e strizzata.<br />
Mettere l'impasto nella teglia e coprire con le mele.<br />
Infornare a 180° per 45 minuti circa previa prova stecchino.<br />

Io ho provato anche ad aggiungere delle noci tritate grossolanamente nell'impasto prima di metterlo nella teglia e il risultato è stato ottimo.<br />

Potete servirla fredda spolverata di zucchero a velo.<br />

Oggi vorrei proporvi questo piatto molto semplice, ma allo stesso tempo molto sano e gustoso.<br />

<b>Ingredienti per 1 persona: </b><br />
75 gr di riso<br />
80 gr di piselli surgelati o in scatola<br />
80 gr di pomodori<br />
Brodo vegetale<br />
1 cucchiaio di olio<br />
1 cucchiaino di parmigiano<br />

Tagliare i pomodori in piccoli pezzi. Scaldare l'olio in una padella e aggiungere il riso. Lasciarlo tostare qualche minuto. Aggiungere i pomodori a pezzetti e far insaporire per qualche minuto e poi aggiungere il brodo.<br />
Durante la cottura conttollare sempre che non evapori tutto il brodo, eventualmente aggiungerne di volta in volta.<br />
A 5 minuti dalla fine della cottura del riso aggiungere i piselli.<br />
A cottura ultimata togliere dal fuoco e mantecare con il parmigiano.<br />
Da leccarsi i baffi... Provare per credere!!!<br />

Preparare il sugo come di consueto. Nel frattempo cuocere la pasta al dente, scolarla e mettere in una teglia da forno con il resto degli ingredienti.<br />
Guarnire con qualche foglia di basilico fresco ed informare in forno preriscaldato a 200° per 15 minuti.<br />

In una ciotola mischiare gli ingredienti secchi: farina, lievito e bicarbonato; mentre in un altra ciotola quelli umidi: ricotta, olio, latte e l'uovo.<br />
Unire i 2 composti e amalgamare per bene. Alla fine unire le gocce di cioccolato.<br />
Versare il composto nei pirottini riempiendoli per poco più di metà e decorare con altre gocce di cioccolato (io ho tritato una stecca di cioccolato fondente)<br />
Informare in forno preriscaldato a 180° per 20 minuti. Fate sempre la prova stecchino.</div>

<span style="font-family: inherit;">Per la preparazione del kefir si devono mettere i granuli a fermentare in un vasetto di vetro nel latte (a temperatura ambiente o da frigorifero, ma non deve essere caldo) coperto con un tovagliolo, in rapporto 1:10 per 24/48 ore ad una temperatura di 20° circa.</span></div>

</div><div class="separator" style="clear: both; text-align: left;">In una padella far sciogliere una noce di burro e cuocere il salmone, salare e continuare la cottura fino a che non si sarà completamente spezzettato.</div><div class="separator" style="clear: both; text-align: left;">Tagliare il salmone affumicato a striscioline, frullarlo con la robiola e aggiungere tanto latte quanto basta per ottenere una crema molto morbida e fluida.</div><div class="separator" style="clear: both; text-align: left;">Comporre le lasagne distribuendo un primo strato di crema sul fondo della teglia. Posizionare la sfoglie leggermente sovrapposte, ricoprirle con altra crema, il salmone fresco cotto in padella e una manciata di grana.</div><div class="separator" style="clear: both; text-align: left;">Continuare fino ad esaurimento degli ingredienti concludendo con un'abbondante strato di crema, grana, pangrattato e qualche fiocchetto di burro e pepe.</div><div class="separator" style="clear: both; text-align: left;">Aggiungere ancora un po' di latte ai 4 angoli della teglia per favorire la cottura delle lasagne e poi cuocere in forno a 180° per circa 15 minuti, coprendo la teglia con la carta stagnola, e altri 5 minuti senza, per fare gratinare bene. </div><div class="separator" style="clear: both; text-align: left;"><br />

Tagliarle a dadini e cuocerle in padella con un filo d'olio e un cucchiaio di brodo vegetale granulare per 10 minuti. In un'altra padella cuocere i gamberetti fino a che non saranno scongelati.</div><div class="separator" style="clear: both; text-align: left;">Nel frattempo preparare il cous cous secondo le indicazioni sulla confezione.</div><div class="separator" style="clear: both; text-align: left;">Una volta cotte le zucchine e i gamberetti unire al cous cous e servire.</div><div class="separator" style="clear: both; text-align: left;"><br />

Scolarle, lasciarle intiepidire e tagliarle a metà longitudinalmente (se sono zucchine grandi, dividetele prima in due pezzi). Con l'aiuto di un cucchiaino o di uno scavino svuotarle delicatamente della polpa, formando delle barchette, e metterle in una pirofila unta con un po' d'olio d'oliva.</span></span></div><div class="separator" style="clear: both;"><span class="Apple-style-span" style="background-color: white;"><span class="Apple-style-span" style="font-family: inherit;">Fare scolare la polpa in un colino oppure asciugarla con della carta da cucina e frullarla brevemente con il mixer a immersione.</span></span></div><div class="separator" style="clear: both;"><span class="Apple-style-span" style="background-color: white;"><span class="Apple-style-span" style="font-family: inherit;">Immergere la mollica del panino con un po' di latte, strizzarla ben bene e schiacciarla con una forchetta. Aggiungere il parmigiano, la maggiorana , sale e pepe e mescolare il tutto.
